Wild sturgeon are critically endangered. Every responsible caviar today is farmed. But "farmed" varies enormously in environmental impact.
Look for Land-Based Farms
Closed-system, land-based farms (where water is recirculated and treated) avoid the disease and effluent problems of open-water aquaculture. Most U.S. sturgeon farms are land-based.
Check the Origin
Domestic American sturgeon ships fewer miles, supports U.S. producers, and operates under strict FDA oversight. It also avoids the carbon footprint of trans-Atlantic chilled cargo.
Beware of Mislabeling
Some products labeled "Russian" or "Iranian" are actually farmed in Eastern Europe and reshipped. Always read the country-of-origin line on the tin.
Ask About Method
The best producers do not sacrifice fish on a single spawn. Ask whether the farm practices "no-kill" or repeat-spawn methods. These approaches are slower but extend the life of the breeding stock.
